Heat a tablespoon of oil in the wok; sauté the chopped onion and chili pepper until the onion softens. Add the curry paste; stir-fry until the mixture is fragrant.

Add the rice; stir-fry until heated through. Remove from heat and place in a large bowl. Add the crab meat, lime juice, and fish sauce. Mix the ingredients to combine.

Beat the eggs with water in a medium bowl. Heat about a quarter of the remaining oil in the cleaned wok; pour a quarter of the egg mixture into the wok. Cook on low heat, tilting the pan occasionally, until almost set. Spoon a quarter of the fried rice mixture into the center of the omelette; using a spatula, fold the four sides of the omelette over to enclose the filling.

Press the omelette firmly with the spatula; then carefully flip to brown the other side. Remove the omelette from the wok; cover to keep warm. Repeat the process with the remaining oil and egg mixture and fried rice. Serve the omelette with lime wedges.
