Clean the duck thoroughly, rub it with lemon juice and let it sit for about an hour. The lemon juice removes the unpleasant odor from birds and even fish. Rinse the duck well and let it dry.

Mix the honey and orange juice until the honey dissolves. Soak the duck in the mixture for a full night, then remove the duck from the marinade while keeping the marinade.

In a deep pot, brown the duck in butter or oil on all sides. After browning, sauté the leeks, celery, carrots, and ginger in the same pot until the vegetables soften.
