Mix the salt with the flour, add the oil and mix the ingredients, add half of the water and knead the dough, then add the remaining water in two batches and knead the dough well, place it on the table and knead it by folding until it becomes homogeneous and fluffy.

Place a little flour under the dough while kneading if necessary.

Place the dough in a floured bowl to rest for a while and cover it with a cloth.

Sprinkle flour on the table and roll out the dough with a rolling pin, lift it and sprinkle flour under the dough if it starts to stick to the table, roll the dough to a nearly transparent thickness until it becomes very light and roughly square in shape.

Brush some oil on the surface of the dough, fold from the top to the center and from the bottom to the center, then brush the new surface with oil, fold from the sides to the center, then from the other side to the center, brush the new surface with oil, then fold the last part from the center onto itself evenly, brush with oil or place in a greased tray.

Place it in a preheated oven at the highest temperature and place the tray in the center; it takes about a quarter to a third of an hour to bake until the top is golden.

To prepare the syrup, place the sugar, water, and lemon juice together in a pot on the stove; when it starts to boil, reduce the heat very low and let it simmer for three minutes, then remove from heat and immediately dilute with two tablespoons of rose water, and after it cools, if it is thick, dilute with rose water or regular water until it becomes very light.
