Place the flour, baking soda, salt, and cinnamon in a mixing bowl.

Mix the mixture for 30 seconds until all the dry ingredients are combined.

In a separate bowl, lightly beat the eggs with a fork and add the oil, apple juice, apple molasses, and brown sugar, mixing for a few seconds. Pour the mixture into the blender and blend for a few seconds until the dry ingredients are moistened and the mixture is combined. Add the raisins, pecans, and apple pieces.

You can cut more apple slices and place each slice on top of the muffins.

Divide the mixture into muffin liners. Bake in a preheated oven at 190 degrees Celsius for 25 minutes or until the muffins rise and become golden and firm to the touch. Serve warm or at room temperature.
