    Clean the rabbit by rubbing it with salt and washing it well with water, removing the entrails while keeping the liver, heart, and kidneys.

    Season the rabbit with salt and pepper, place it in a strainer, and let it sit for about half an hour to drain the liquids.

    Dry it and fry it in a generous amount of olive oil, turning it until browned, then transfer it to a baking dish.
