Heat 2 teaspoons of vegetable oil in a frying pan and lightly fry the chicken pieces, then remove them from the heat and transfer them to a pot.

Add the unchopped onion, cinnamon stick, cardamom pods, and bay leaves. Cover the mixture with water and let it boil over moderate heat. Be sure to remove any foam that forms on the surface of the water.

When the chicken is well cooked, remove it from the pot and set it aside, then strain the broth and set it aside for later use.
