Steps

Clean the fish well and wash it with salt and water.

Cut it into four or five pieces or fillets.

Heat the oil well in a deep pot and add the chopped onion.

Stir continuously until it turns dark brown, being careful not to burn it.

Remove from heat and drain the oil well; set the oil aside for later use.

Put 4 liters of water in a pot and add the bay leaves, cardamom, cinnamon, and cloves, and place them on the heat.

Add the browned onion and let them cook for at least a quarter of an hour until the water turns dark brown.

Remove from heat and drain well; take only the water and divide it in half.
