Place the semolina and chicken flour in a bowl, and mix with butter or ghee. Cover the bowl and set aside until the next day.

The next day, preheat the oven to medium heat.

Add the orange blossom water, rose water, and yeast to the semolina and flour mixture.

Knead the ingredients well until a cohesive dough is formed.

To prepare the filling, mix all the filling ingredients in a bowl.

Take a piece of dough the size of a walnut, flatten it in the palm of your hand, and place a tablespoon of filling on top.

Then fold the edges of the dough over the filling and roll it in your hand to form a small ball.

Place the filled dough ball in the maamoul mold and press it inside well until the dough ball takes the shape of the mold.

Then turn the mold in the opposite direction and tap its edge to release the maamoul piece, then place it on the baking sheet.

When the baking sheet is full, place it in the oven and bake for 15 to 20 minutes until the maamoul pieces are well baked and their bottoms are browned.

Remove the maamoul pieces from the oven and let them cool. When serving, sprinkle with powdered sugar.
