To prepare the shawarma, cut the chicken breast into thin strips and marinate in vinegar, yogurt, and spices for at least two hours.

Place a Tefal frying pan over high heat until very hot, add the oil and butter, and slowly add the chicken strips to avoid releasing the chicken juices, stirring occasionally until browned and cooked through.

In the frying pan, add boiling water with half a lemon to extract the remaining flavor from the chicken in the pan, and let it boil well while scraping with a wooden spoon to extract all the flavor, then turn off the heat.

For the mayonnaise, place the egg white, garlic powder, salt, and citric acid in the blender and blend for ten seconds, then add the yogurt through the lid opening while the blender is running and blend for another ten seconds. Add the corn oil in a thin stream through the lid opening while the blender is running until the mayonnaise thickens well at maximum speed.
