Ingredients

  • Frozen okra
    1 kilogram
  • Tomatoes, peeled and diced
    500 grams
  • Large onion, sliced thinly
    1 piece
  • Tomato PasteTomato Paste
    2 tablespoons
  • Crushed garlic cloves
    6 cloves
  • Fresh coriander, chopped
    2 tablespoons
  • Olive oilOlive oil
    0.3 cup
  • Lemon JuiceLemon Juice

    In a frying pan, fry the okra in 2 tablespoons of olive oil for 10 minutes until its color changes.

    In a pot over low heat, heat the remaining olive oil, then add the onion, garlic, and chopped coriander. Stir the ingredients together for 4 to 5 minutes, then add the okra.

    Dissolve the tomato paste in half a cup of water, then add it to the pot, along with the diced tomatoes and salt.

    Stir the ingredients and cover the pot. Let the okra cook on high heat for about 30 minutes or until the okra is tender.
