Ingredients
- Lamb meat cut into cubes the size of an egg2 kilograms

- Boiled eggs, sliced2 pieces
- Onion, cut into round rings1 piece

Wash the rice and set aside. Soak the saffron threads in 1/3 cup of water and set aside as well.

Boil the meat cubes for 45 minutes in water, then add the loomi, a teaspoon of sweet pepper, black pepper, and salt.

Remove the foam from the surface of the water. Once the meat is cooked, drain it and set aside. Keep the meat broth for later use.

Fry the onion in vegetable oil until golden, then add the boiled meat, remaining sweet pepper, red pepper, turmeric, and coriander. Stir the mixture over medium heat.

Pour the yogurt over the meat and onion and mix before adding the potatoes and tomatoes. Cover the pot and let it cook over medium heat for 10 minutes, then add the tomato paste. Stir the mixture, cover the pot again, and let it cook over medium heat for another 10 minutes.

Meanwhile, boil the rice in the meat broth and remove from heat before it is fully cooked. You can add water if the amount of broth is insufficient.

Place half of the cooked rice at the bottom of a tray, cover it with a layer of the vegetable and meat stew, then pour the remaining rice on top.

Sprinkle the saffron water over the rice, cover the tray with aluminum foil, and then cook the biryani on low heat for 10 to 20 minutes or until the rice is fully cooked.

For garnish: Fry the onion rings and add the sliced boiled eggs and fried onion on top of the biryani dish.
