Steps

    Wash the rice and soak it in cold water, then set aside for 30 minutes.

    In a large pot, heat the vegetable oil and fry the sliced onion until golden brown. Then remove from heat and set aside.

    In the same pot, fry the chopped onion over medium-high heat and add the shrimp, frying while stirring until they turn pink (for about 4-5 minutes). Then, add the tomato paste, garlic, dill, spices, cinnamon sticks, cardamom pods, chicken broth cubes, and water, stirring the ingredients over low heat. Add the chopped fresh coriander leaves, then remove from the pot and set aside.

    In the same pot, bring 1.5 liters of water to a boil and add the rice, cooking until it is ¾ cooked.

    Drain the rice in a strainer and discard the excess water.

    Melt the ghee in the bottom of the same pot and add a layer of the drained rice followed by a layer of the shrimp and onion mixture with a sprinkle of saffron powder. Repeat this step until the shrimp and rice sauce is used up.

    Steam the rice and shrimp over low heat until the rice is fully cooked (for about 20 minutes).

    Gently fluff the cooked rice with a fork to ensure even distribution of the rice and shrimp.
