In a bowl, whisk the eggs with the lemon zest, vanilla, and salt.

Add the powdered sugar, melted butter, and baking powder, then mix well.

Add the cocoa to the bowl and mix the ingredients well, then gradually add the flour while mixing the ingredients thoroughly. Knead the mixture until you get a cohesive and soft dough.

Let the dough rest for a quarter of an hour, then roll it out on a flat surface and cover it with plastic wrap, rolling it with a rolling pin to a thickness of 1/2 cm.

Cut the dough with a cookie cutter or using a tea cup to get uniform circles of dough in size, shape, and number as they will be stacked on top of each other.

Place the dough circles on baking trays and bake until dry. Then remove the circles from the tray and let them cool.

When the circles cool, stack them as follows: take one circle, spread a little melted chocolate on it, then cover it with another piece. Spread the top piece with a layer of chocolate, and draw lines with a fork to add shape to the bites, and you can also decorate them with chocolate sprinkles.
