    Combine the flour, yeast, and salt in a large bowl. Gradually add the oil and water while stirring until the mixture forms a soft dough. Knead the dough on a floured surface for about 5 minutes or until it becomes soft and pliable. Place the dough in a large oiled bowl and turn it once to coat with oil. Cover and let it rise in a warm place for about an hour or until it doubles in size.

    Meanwhile, place the tomatoes in a small heatproof bowl. Cover with boiling water and let sit for 20 minutes, then drain. Chop the tomatoes coarsely.

    Grease a frying pan with a little oil and sauté the garlic, chili, and bell pepper over medium heat for 5 minutes or until the bell pepper softens. Remove from heat and stir in the tomatoes. Allow to cool to room temperature. Add the bell pepper mixture to the cheeses and herbs in a medium bowl.

    Preheat the oven to a very hot setting. Grease two baking sheets with a little oil.

    Place the dough on a floured surface and knead until soft. Divide the dough into quarters and roll each quarter into a circle with a diameter of 18 cm. Place a quarter of the cheese mixture in the center of each quarter and brush the edges with a little egg white. Fold the circle over the filling and seal the edges to close. Repeat the same steps for the remaining dough, cheese mixture, and egg white.

    Place the calzone pieces on the prepared trays, brush with egg white, and sprinkle with a little extra salt if desired. Make two slits on the surface of each calzone. Bake for 15 minutes or until lightly browned.
