Place the eggs, sugar, oil, vanilla, zest (if used), and grape molasses (if used) in a mixing bowl, and beat on medium speed for 5 minutes until the mixture thickens slightly like mayonnaise.

Add the flour, baking soda, cinnamon, and almond flour (if used); mix well. Slowly add the carrots and nuts to the mixture.

Beat the egg with the cheese, powdered sugar, and vanilla until the cheese mixture is smooth.

Place 3 small baking sheets lined with parchment paper, preheat the oven to 180 degrees Celsius, and then pour the carrot cake mixture into them until half full. Then pour the cheese mixture up to 1 centimeter before the edge of the sheet.
