Drain the chickpeas. Alternatively, you can place them in boiling water with a little baking soda, then drain and peel. Place the chickpeas in a blender. Add the remaining ingredients and blend until combined. Taste and adjust the spices. Refrigerate and cover until ready to fry.

Heat the oil in a large deep pot; shape the falafel using a teaspoon or cookie scoop; place the falafel in the hot oil and let them cook until browned on all sides. Remove and dip in sesame and black seed, if desired. If fried with the seeds, they will fall into the oil.
