    To prepare the filling, in a pot, heat the oil and sauté the onion until golden, then add the sumac, pepper paste, and salt, and set the filling aside.

    To prepare the falafel, grind the falafel ingredients twice in a grinder, add the spices and water, knead the dough, and let it rest for 15 minutes.

    Heat a generous amount of oil in a pan, place half a falafel disc in the mold, add a teaspoon of filling, then complete forming the disc and gently place it in the oil.
