In a bowl, combine the flour and salt, then gradually add the soda water and knead by hand for 10 minutes until you have a cohesive and non-sticky dough. Cover the dough and let it rest for 15 minutes.

To prepare the filling, in a pan over heat, heat the olive oil and sauté the onion until it softens. Add the spinach, salt, and black pepper, and stir for 5 minutes or until the spinach changes color. Turn off the heat and add the feta cheese, mixing until the filling is well combined. Let it cool.

To prepare the pastries, divide the dough into 3 equal parts and roll each part out until it is thin, about 1.5 mm thick and approximately 30 cm in diameter.
