Place the white flour and wheat flour in a mixing bowl, and mix for a few minutes. Add the mahlab, anise seeds, lemon zest, and baking soda. Mix everything until the spices are combined.

Add the olive oil through the mixer tube; mix for a minute or more until the oil is absorbed and the dough resembles sand. Also add the grape molasses through the mixer tube and mix until the dough sticks to the sides of the bowl and clumps together, which takes a few minutes. If necessary, add more molasses to the dough for better cohesion.

To shape the dough: it should be moist, firm, and cohesive. Cut the dough into small pieces and roll them into sausages about 10 cm long. Join the ends of the sausages to form a ring.

Dip the ring in sesame seeds. Place the cookies on a baking sheet lined with parchment paper.
