Wash the meat with regular water, then place it on the fire, adding enough water to cover the meat, and remove any scum from the meat.

Add the quartered onion, halved garlic, bay leaves, lemon leaves, rosemary, kabsa spices, both types of paprika, salt, curry, cardamom, cloves, and 2 cinnamon sticks to the meat. Place all ingredients in a pressure cooker, seal tightly, and leave for 45 minutes.

Place a pot on the fire with boiling water and add the chopped carrots, mushrooms, and peas. Let it boil until cooked.

Meanwhile, heat oil in another pot. Add a tablespoon of curry, a tablespoon of both types of paprika, 2 cinnamon sticks, 5 cloves, 5 cardamom pods, 5 whole black pepper, kabsa spices, and a tablespoon of salt.

Add the sliced onion to the spices and stir until golden. Add the sliced garlic and stir. Add the colored peppers to the onion and garlic and stir.

Add the diced and grated carrots, peas, and mushrooms to the mixture and stir for 10 minutes before closing the pressure cooker. Reserve a cup of the meat broth aside. Add the chopped tomatoes to the mixture, and after 10 minutes of stirring, add the tomato paste and stir gently.
