    Clean and cut the chicken into 8 pieces.

    Wash the rice and soak it in hot water for 20 minutes.

    In a pot, heat oil and fry the chicken pieces over high heat until browned on both sides (the chicken should not be cooked through, just browned).

    Take the chicken pieces and place them in a second pot over medium heat, add 3 liters of boiling water, and add the mixed spices and black pepper. When it boils, reduce the heat and let it simmer until fully cooked. Add salt to taste and stir well, then leave it.

    In the meantime, fry the following spices: cinnamon, limes, cardamom, cloves, and bay leaves for 3 minutes in the pot used to fry the chicken with the same oil.

    When the mixture boils, add the kabsa spice and salt, stir well, and reduce the heat until fully cooked.

    The rice is ready to cook, the chicken is cooked, and the mixture is ready. Now for the final steps: mix the entire mixture with the rice, pour it into a pot, and add 4 and a half cups of the broth we cooked the chicken in, then add the tomato paste and stir well.
