Preheat the oven to 220 degrees Celsius. Prepare two baking sheets and line them with parchment paper.

Mix the thyme with the grated halloumi cheese in a bowl. Set aside.

Place the water, butter, and salt in a pot and heat the mixture until it boils. When it boils, pour in all the flour and stir with a wooden spoon until the dough comes together and sticks to the sides of the pot.

Remove the pot from the heat and let it sit for a few minutes. Then pour the mixture into a stand mixer. Turn on the mixer and add the eggs, one at a time, until combined. Then add the cheese and thyme.

Place the mixture in a piping bag or use a small spoon to form small, equal-sized balls and place them on the lined baking sheet. About 50 small balls should be formed. They can be brushed with beaten egg yolk for a golden shine.

Place in the oven and bake for 15 to 20 minutes, then reduce the oven temperature to 190 degrees Celsius and bake for an additional 15 minutes or more, until puffed and dry. Serve immediately, or cool and store in an airtight container in the refrigerator.
