Ingredients

Separate the top of the chicken thigh from the bottom so that you have 12 pieces of chicken.

Heat 3 tablespoons of olive oil in a frying pan over medium heat. Add the chicken pieces and fry for about 10 minutes until they start to cook. Then remove the chicken from the heat and set aside.

Pour the remaining oil into the same pan, add the onion, celery, carrots, and mortadella, and let the pan simmer until the onion wilts. Add the garlic and mushrooms and let the mixture cook for an additional two minutes.

Return the chicken to the pan, add half a cup of chicken broth, red vinegar, and let the mixture cook for an additional two minutes.

Add the tomatoes, sugar, balsamic vinegar, herbs, and the remaining chicken broth, and reduce the heat. Cover the pan and let it cook for 20 minutes, stirring occasionally. Add the olives and let the pan cook for an additional ten minutes.

Remove the chicken from the pan and let the sauce simmer for another 6 minutes.

Serve the chicken and sauce with pasta and sprinkle parsley on top for garnish.
