Place the flours in a mixing bowl with the salt. Turn on the machine and mix the flour mixture with the salt for a few seconds. Add the olive oil. Then add water and stop the machine when the dough stretches to the sides of the bowl. Transfer the dough to a floured work surface and knead for a few seconds, ensuring it is smooth and not sticky, adding sprinkles of flour if necessary.

Take a piece of dough and press it between your palms until it becomes flat in the shape of a disc, about 10 cm wide. Using a rolling pin, roll out the disc until it is extremely thin to the point of transparency and shape it into an oval. Carefully lift it and place it on an ungreased baking sheet. Using the back of a teaspoon, spread several teaspoons of the zaatar mixture (with olive oil) over the entire masa bread.
