Ingredients

    Sift the flour, add the milk with the dissolved yeast, and gradually add the water while kneading until we get a cohesive dough. Cover it and let it rest for half an hour to rise.

    Gradually add two cups of water to the dough while kneading until the dough softens.

    Add the salt and knead a little, gathering it into a single mass at one side of the bowl.

    Spread a large kitchen cloth and sprinkle flour on it, then shape the dough into medium-sized balls; with these ingredients, we get only two balls.

    Dust the balls with flour so they don't stick to the cloth, then gently flatten them with your palm to about one centimeter thick. Cover them and let them rest for about a quarter of an hour if it's hot; if it's cold, let them rest for half an hour to rise.

    Gently lift the flattened dough with both hands and place it on the tajine. When it starts to puff up in the tajine, gently flip it over, holding it by the edges and turning it until it browns on both sides.
