Prepare the kofta first: Chop the onion and place it in a strainer with sumac and salt, letting it drain for 20 minutes or more.

Chop the parsley and gather the remaining spices. Place the meat, spices, drained onion, and chopped parsley in a food processor. Run the machine for a few minutes until the meat becomes smooth like dough.

Preheat the oven to 200 degrees Celsius.

Shape the kofta into balls using a cookie scoop and place them on a baking sheet lined with aluminum foil. Bake in the oven for 5 minutes or until the meat is cooked through. Prepare the tahini sauce while the meatballs are cooking. Mash the garlic and chop it into small pieces with a little salt, then place it in a bowl and add the tahini, stirring the mixture. Then add the lemon juice and stir, followed by the water, mixing until smooth.
