Ingredients

  • 1000 grams of kunafa dough

  • 100 grams of sugar, or half a cup of syrup for the filling

    Remove the pistachios from the hard shells, chop them or leave them whole, add two tablespoons of ghee and sugar, and mix.

    To make the rolled kunafa, take a small amount of kunafa, spread it out, brush it with a little melted ghee, place the pistachios on top, and roll it into a cylindrical shape. Place it in a greased baking sheet and repeat the process until all the rolls are in the sheet.

    Soak the baking sheet in hot oil with ghee, then place it in the oven until golden. Remove it from the oven, drain the ghee, pour syrup over it, wait for it to cool, and cut it diagonally before serving.

    To make the bird's nest, shape small circles from the kunafa to form nests and arrange them on a baking sheet. Place several pieces of pistachios, cashews, or almonds inside each nest, soak them in ghee in the same way as the rolled kunafa, and roast them in the oven until golden. Drain and add a little syrup on top, let cool, and serve.
