Pistachio and Date Maamoul

Ingredients

Place the flour in a large bowl, make a well in the center, and add the ghee. Start sifting the flour and ghee and rub them together with your hands until well mixed. Then add the sugar and the water with dissolved yeast, and knead well. Let it rest for about two hours.

Prepare the filling by coarsely chopping the walnuts and adding sugar, water, rose water, and ghee. Mix well.

Prepare the date paste by adding ghee and a little water, then shape it into very small balls the size of the mold you want.

After the dough has risen, take a small piece and shape it into a small ball. Flatten it with your finger to a thickness of 0.25 cm and fill it with pistachios, then close it and set it aside until all the pistachios are used.

In the same way, make the date balls. You can also roll out the dough to the desired thickness, cut out circles, place the filling on the circles, and then close them until all the filling is used.

Start placing the balls in the mold, flip them, and place them on a baking sheet. Bake in the preheated oven for about 10 minutes, then let cool and serve.

You can roll the balls in sesame seeds and place them on a baking sheet. You can also roll some balls into finger shapes in ground pistachios and then place them on the baking sheet.

You can place a pistachio on top of each maamoul for decoration, then bake them. Alternatively, you can place the maamoul directly on the baking sheet without a mold and decorate them with a small fork according to your preference.
