    Place the cleaned chicken thighs in a large pot, cover with water, and bring to a boil, skimming off any foam that appears on the surface.

    Add two cubes of Maggi chicken broth, bay leaves, cinnamon, and Emirati spice, and bring the mixture to a boil. Reduce to a simmer for two hours or until the chicken is fully cooked. Strain the broth through a strainer and remove the cooked chicken, discarding the bones and bay leaves.

    In another pot, heat the vegetable oil and sauté the onion until golden brown, then add the tomato paste and fry the mixture for 2-3 minutes. Add the ginger, garlic, and crushed tomatoes, and bring the mixture to a boil.

    Add the reserved chicken broth, lentils, dried lime powder, and green pepper, cover the pot, and simmer until the lentils are cooked, about one hour.

    Add the cooked chicken pieces, remove the bones, and mash the contents of the pot using a potato masher until the chicken is in small pieces and the lentils are mashed. (Do not use an electric blender or food processor). Add additional water if the stew becomes thick. Stir in half of the fresh coriander and simmer for an additional 30 minutes.
