Boil the meat for 2.5 hours: remove the scum, add the spices and onion, and let it simmer covered on low heat.

Pour half a cup of hot water over the dried yogurt and crumble it. Once softened, place it in the blender with the yogurt and cornstarch.

Strain into the pot where we will continue cooking and let it simmer on low heat while stirring to prevent clumping.

Once it boils, add the strained meat broth, stir, adjust the salt to taste, then add the meat and let it simmer for half an hour on low heat.

Fry the meat with a sprinkle of spice and salt in a tablespoon of ghee. Once browned, add the Maggi cube, hot water, spices, and lemon juice.
