  • Mixed frozen vegetables (carrots, okra, pumpkin, peas, corn)

  • Peeled potatoes, whole

  • Diced potatoes

  • Crushed or finely chopped tomatoes

Steps

    Place the onion with the meat and whole peeled potatoes in a pot over heat, add salt, spices, and water, and let it boil.

    Once the potatoes are cooked, remove them from the pot, grate them, and set aside.

    Continue cooking the meat until the water evaporates, then add the oil to the onion and sauté well with the meat.

    Add the crushed tomatoes, grated potatoes, a little water, and continue stirring, then add the diced potatoes and tomato paste, and you can add water if needed.

    Add the remaining mixed vegetables and let it boil for two hours or more until the meat is tender, stirring occasionally to prevent sticking to the pot. Serve hot with boiled white rice.
