To prepare the dough, sift the flour and add the salt and about a cup of water, then knead the ingredients until they form a dough. Cover with a cloth and let it rest for 30 to 40 minutes.

To prepare the matazeez, fry the onions in ghee until golden, then add the pieces of meat, dried limes, and red chili. Mix the ingredients well and leave on the heat until the meat changes color slightly.

Add the tomato paste and let everything simmer on low heat for 10 minutes, then add the diced tomatoes, black pepper, dried coriander, cinnamon, and cardamom.

Mix the mixture well, then submerge it in water. Cover the pot and let it cook for 45 to 55 minutes until the meat is somewhat tender.

In the meantime, boil the green beans in water briefly, then drain.

Add the green beans and all the remaining vegetables to the meat mixture, then cover the pot and leave on medium heat until the vegetables are fully cooked.

Divide the dough into balls the size of an egg, then roll the balls into flat circles and add them to the meat and vegetable stew. Leave the pot on medium heat for an additional 10 to 15 minutes until the dough is cooked.
