Clean the chicken, remove the backbone, cut it in half, and make slits in it.

Put the marinade ingredients in the blender and blend well, then take about 3/4 cup and set it aside for the rice, and soak the chicken in the rest for at least four hours.

Take a pot and add the kilogram of salt (the salt should reach halfway up the pot) and press it down with your hand. Leave it on medium heat for half an hour, then place the chicken on top without stirring and ensure it doesn't stick to the sides of the pot. Cover with two layers of aluminum foil and place a weight on top.

In a suitable pot, add the oil and whole spices, then add the marinade we set aside and let it cook for two minutes. Then add 4 1/2 cups of boiling water, followed by the drained rice, and let it cook.

For the saffron, dissolve it in a little hot water, then pour it over the rice from one side without stirring it before turning off the heat for about two minutes.
