Place the middle rack and preheat the oven to 350°F (177°C).

In a bowl, mix the butter with the light brown sugar using an electric mixer until well combined and the mixture is creamy and smooth (for about two to three minutes). Add the egg and vanilla and mix until combined.

In another bowl, combine the flour, salt, cinnamon, and baking soda and mix well with a whisk, then add to the butter mixture and mix with the electric mixer until combined, then add the raisins and continue mixing.

Prepare two baking sheets lined with parchment paper and shape the cookies using a spoon or ice cream scoop (make 20 pieces from the mixture) and remember to leave about one and a half centimeters of space between each piece.

Bake in the oven for about 12 to 15 minutes until the edges of the cookies are browned and they are golden in color. Remove the baking sheet but leave the cookies on it for a while as they will continue to cook and firm up, then transfer the cookies to a rack to cool completely.

When the edges of the cookies are browned, the surface will be soft. Don't worry, this is completely normal; you will be surprised at how firm they will become when cooled, and the result will be wonderful and delicious.
