Mix the flour with the salt.

Place a mound of flour on a work surface and make a well in the center.

Add the three eggs and olive oil into the well.

Using a fork, mix the flour and eggs and knead the dough for 10 minutes until it becomes smooth. It is advisable not to add too much flour. Cover the dough with plastic wrap and refrigerate for several hours.

Cut a piece of dough and roll it out (you can dust the rolling pin with flour) until the dough is thin.

Place the herbs on the thin dough (put a handful of herbs but not too much) and roll out another piece of dough until it is the same thickness as the first piece.

Place the second piece on top of the first and roll with the rolling pin until the two pieces stick together. Then roll the dough out until it is paper-thin and transparent.

If not cooking immediately, keep them in a plastic container and place each piece on wax paper or paper towels and refrigerate.
