Preheat the oven to 220 degrees Celsius.

Separate the garlic cloves while keeping their skins and sauté them in a tablespoon of olive oil.

Make a slit in the skin of each tomato with a knife. Place the tomatoes in a bowl and pour boiling water over them. Leave for 30 seconds then transfer to cold water. Peel the tomatoes, remove the seeds, and chop coarsely.
