Ramadan Qatayef with Walnuts

Start by preparing the syrup as it is served cold. Dissolve the sugar in 1 ½ cups of water over medium heat. Then add the rose water and orange blossom water, stirring until the mixture begins to boil.

Add the lemon juice and stir well, then let the syrup simmer until it thickens slightly. Remove from heat and pour the syrup into a serving bowl.

To prepare the dough, mix all the ingredients except the baking soda in a bowl, then gradually add the hot water while stirring until you achieve a liquid batter. Let the batter rest for one hour.
