For the cheese, place the milk in a pot over heat, and when it starts to boil, add the vinegar and stir over medium heat until the cheese separates from the liquid. Leave it on the heat, stirring occasionally for three minutes, then strain the cheese using a fine strainer and place it in the refrigerator to cool.

When the cheese cools, mix it with a tablespoon of sugar and a pinch of cinnamon.

For the qatayef, combine the dry ingredients for the qatayef batter and mix with a whisk. Then add the warm water (the water temperature should be between 50 and 60 degrees Celsius) and mix well with the whisk. Cover with plastic wrap and a cloth and let it rest for one to one and a half hours. During this time, open the batter two or three times and whisk it well, then cover it again. This stirring is what gives the qatayef their crispiness.

After the fermentation period is over, place a Tefal frying pan over medium heat and pour a portion of the batter to form a piece of qatayef. We know the qatayef is done when its surface dries, but be careful not to let it dry too much or brown excessively.

Once the qatayef are cooked, place them on a cloth and cover with another cloth until they are filled. When filling the qatayef, place an appropriate amount of cheese and seal them well, then cover them until frying.

When frying, heat the oil to 180 degrees Celsius and do not place more than four pieces at a time, turning them occasionally. When the qatayef are golden brown, place them on a rack and drizzle syrup over each piece as desired.

For the syrup, place the sugar, water, and cinnamon over heat, stirring continuously until the sugar dissolves. When it boils, add a pinch of lemon salt and boil over medium heat for only 7 minutes. When you turn off the heat, add the rose water.
