Prepare the meat and insert the peppercorns by piercing them with a metal skewer. Then squeeze the lemon juice and rub it on the meat. Now, coat all of it with mustard and sprinkle soy sauce, steak sauce, ground black pepper, nutmeg, and a pinch of salt. Marinate for 12 hours in the refrigerator.

Prepare a non-stick pot and heat a cup of corn oil in it, then start browning the meat on all sides. Transfer it to another pot without oil and add boiling water until it reaches halfway up the meat. Add the onion, carrot, and black peppercorns, and let it simmer on low heat for 3 hours covered. Use a knife to check for doneness; it should not need salting. Note: Check it occasionally and add a little water whenever it reduces.

Once cooked, prepare the sauce by finely chopping the onion and sautéing it in butter until softened, then add the mushrooms and sauté them. Next, add the flour, stir it, and start pouring in the water. Mix well and check for salt and flavor, then add the cream and cheese. Finally, add a squeeze of lemon, black pepper, and nutmeg to taste. Now transfer the meat, carrot pieces, and black peppercorns with two tablespoons of the remaining broth next to the meat over the sauce and let them simmer for a quarter of an hour without stirring the meat, and it will be ready.
