Ingredients
- Beef, thigh cut into medium cubes0.5 kilogram
- Potatoes, peeled and cut into medium cubes3 pieces
- Zucchini, peeled and cut into medium cubes3 pieces
- Pumpkin, peeled and cut into medium cubes1 piece
- Green beans, fresh and green with skin cut into long rectangles5 pieces
- Eggplant, cut into circles1 piece
- Onion, finely chopped2 pieces
Tomato Paste2 cans
Turmeric1 teaspoon
Cardamom1 teaspoon
Ground Cinnamon1 teaspoon
Dried Coriander1 teaspoon
Black Pepper1 teaspoon- Loomi (dried black lime)1 teaspoon
Ginger1 teaspoon
Mixed Spices1 teaspoon- Salt to taste0

Sauté the onion in a little vegetable oil in a large tray.

Add the meat cubes to the onion and sprinkle the spices on top.

When the meat is browned, flip it to the other side.

Add the vegetables as follows: 2 potatoes only, leave the third one whole, then add the zucchini and pumpkin. Stir with the meat.

Add hot water until it covers the ingredients in the tray.

Add the tomato paste. Cover the tray and let the mixture boil for one hour.

After an hour, remove the lid, take the whole potatoes and mash them to thicken the salona, then add them to the salona and stir.

Add the green beans and okra, fry the eggplant or roast it in the oven, then place it on top of the salona.
