    In a casserole, add water and place the sugar in the center of the casserole as much as possible (do not place it on the edges) along with the lemon juice.

    Turn the heat between medium and high and cover the casserole, letting it boil (every now and then, lift the lid slightly to check if it has started boiling).

    The purpose of covering the casserole is to create steam that helps dissolve the sugar that may stick to the sides of the casserole and to prevent crystallization.

    When it boils, it should look like syrup. Lower the heat to medium, remove the lid, and let it boil for about ten minutes or until it turns into caramel (a dark golden color). Tilt the casserole occasionally to stir the caramel.

    In the meantime, heat the cream slightly for about a minute in the microwave, then gradually add it while continuously stirring with a whisk, being careful of bubbling (when adding the cream, the heat should be very low).
