    Wash the fish and dry it by patting it, toast the pine nuts, and chop the coriander leaves and set aside.

    Cut the fish into thin, flat slices, each about 15 cm wide and 1.5 cm thick. Each medium-sized fish fillet usually yields two pieces.

    In a frying pan, heat the vegetable oil and sauté the onion until it becomes translucent. Add the tomato paste and sauté for two minutes. Add the garlic, tomatoes, chili flakes, and cumin powder, and sauté the mixture again until the tomatoes become soft. Add the Maggi chicken stock and water, and let the pan simmer over medium heat for 10 minutes. Then transfer the contents of the pan to an oven-safe dish.

    In a food processor, blend the garlic, pine nuts, coriander leaves, and salt until it becomes a soft paste, gradually adding the olive oil.

    Place a piece of fish on a dry surface and pour a tenth of the filling in the center, adding two pieces of sliced red bell pepper. Gently wrap the fish around the filling and place it in the oven-safe dish with the sauce. Push the fish pieces into the sauce until it covers two-thirds of the fish. Repeat with the remaining fish pieces and filling.

    Bake the fish in a preheated oven at 180 degrees Celsius for 15-20 minutes or until the fish is cooked through. To prevent the fish from burning during baking, cover it with aluminum foil for half of the cooking time.
