Mix the dough ingredients together and knead well until smooth, adding a little flour as needed, then cover and let rest for one hour.

To prepare the filling, heat the oil and butter in a pan, add the onion and sauté until softened, then add the ground meat and stir well, seasoning with salt, black pepper, and thyme, and cook until the meat is done and the water has evaporated.

Add the tomato paste to the meat and stir, then remove from heat and add the chopped tomatoes and parsley, mixing well.

To prepare the sambousek, mix a little flour with a little water to create a slightly liquid mixture to brush the edges of the dough so they do not open during baking.
