  • Coconut milk (or 2 cups of regular milk or any milk of your choice)

    Place the fish fillet in a large frying pan, pour in one cup of coconut milk and one cup of water, and poach the fillet for 15 minutes until the fish flakes easily and is cooked through. Set aside.

    Meanwhile, cook the potatoes until tender. Place the peeled and chopped potatoes in a large pot, add one cup of coconut milk, lemon zest, salt, a little sumac, and 3 tablespoons of butter, and mash the mixture until smooth.

    Add the fish fillet to the mash and blend using a hand mixer or meat mallet. Season the mixture with some fresh coriander or herbs of your choice. Serve with yogurt or sour cream, or mix with the potatoes and cod with a little olive oil if desired.
