Chop the onion and place it in a strainer lined with paper towels. Sprinkle salt and sumac over the onion, stir slightly with a spoon to mix, and let the onion drain for 30 minutes or more.

Place the meat, chopped parsley, drained onion, dried tomatoes, and all the spices in a food processor. Run the machine for 3 to 5 minutes until the meat becomes paste-like, scraping down the sides of the bowl.

Line 3 baking sheets with aluminum foil. Open each piece of pita bread and brush with ghee or oil. Place a generous amount of kofta on the bread and spread evenly with a spoon. Fold the sides of the pita bread and place on a baking sheet. Repeat the step until all the bread is filled and all the meat is used. Using kitchen scissors, cut the bread into triangular pieces.

When serving, preheat the oven to 190 degrees Celsius and place the baking sheet inside. Bake for 5 minutes and remove from the oven. The bread should be toasted and the meat cooked. Serve immediately with salad as a main dish or as is as an appetizer.
