    Soak the rice in water and in another bowl soak the saffron and yellow coloring in a cup of water.

    In a pot over heat, heat the corn oil and fry the sliced onions until golden brown, then remove the onions from the oil and set aside.

    Drain the rice from the soaking water, put five cups of water in a pot over heat until it boils.

    To assemble the sayadiya, in a deep pot, place a layer of rice, then a layer of the fried fish pieces, followed by a layer of tomato sauce, and repeat the layers until finished with a layer of rice.

    Toast the pine nuts in ghee and sprinkle them over the last layer of rice.
