Ingredients

The shawarma meat should be cut into long, somewhat thick strips. I prefer to take each strip and cut it into two (cut it lengthwise) to have two strips of the same length and thickness.

Place the meat in a flat dish or Pyrex tray, add the lemon and orange, and rub the meat with the citrus while squeezing the lemon and orange slices.

Add the pepper, seven spices, cardamom, vinegar, and yogurt, and mix them well. Let the mixture marinate for at least 4 hours (I prefer to leave it overnight).

In a suitable frying pan, heat the oil over high heat, remove the lemon and orange, take a portion of the meat and squeeze it with your hands to remove any unwanted juices, then place it in the frying pan until all the meat is cooked.

(I reiterate that the frying pan must be very hot as I do not want the meat juices to escape).

Stir until cooked (it won't take long), then add salt after cooking.

Once cooked, prepare a burning charcoal, make a hole in the center of the meat, place a piece of aluminum foil in the hole, add the charcoal and a little oil on top, cover it immediately and let it sit for about five to ten minutes.

Serve the beef shawarma with sliced onions mixed with sumac and parsley, tomatoes, tahini sauce, and of course, potatoes.

To make the sauce: mix the tahini with lemon juice; you will notice that the tahini becomes thick, which is normal. Add the yogurt and garlic, mix well, and add salt.
