Wash the fish from the outside and clean its belly, remove the gills from the head and wash it well, make 3 small cross cuts on each side.

Boil the potatoes with their skin until half cooked, then peel and cut into thick rings.

Slice the onion and bell pepper into rings, chop the garlic and hot pepper together, then dice the tomato into small cubes, chop the coriander and celery into large pieces by hand.

Stuff the head of the fish and the cross cuts with the garlic and hot pepper mixture and rub some of it inside the belly.

Mix the onion, bell pepper, coriander, celery, and all the spices with 3 tablespoons of oil well with the potato rings so that the potato rings do not break, and let the mixture sit for 5 minutes to combine.

Make a mixture of tomato with part of the previous mixture without the potatoes and stuff it into the belly and head of the fish.

Leave the tray in the oven for 35 minutes, then take it out and remove the aluminum foil, return the tray to the oven again and turn on the grill only for 10 minutes to give color to the fish.
