  • 1 1/2 cups of hot water or broth

Steps

    Boil the potatoes or steam them. Let them cool and peel. Set aside.

    Boil 1 1/2 cups of water. Add a vegetable broth cube and stir. Once dissolved, add the bulgur and let it swell for about 10 minutes. Pour into a strainer and press with a spoon to remove excess water. Set aside.

    Chop the onion in the blender or by hand, and add the chopped potatoes and bulgur.

    Sprinkle all the spices and run the blender until the mixture is well combined.

    Taste and adjust the seasoning, then spread on a serving plate. Create indentations using the back of a spoon and drizzle with extra virgin olive oil on top of the kibbeh. Serve with fresh mint leaves and green onions.
