Sauté the green onion in a frying pan with spinach, parsley, coriander, green garlic, and fenugreek in 4 tablespoons of vegetable oil, stirring constantly until the vegetables turn golden, then remove from heat and set aside.

In the same frying pan, sauté the onion in 2 tablespoons of oil until it wilts, then add the meat, turmeric, black pepper, and salt, and cook until the meat changes color.
